Eating raw peas by a hedgerow

This is my favourite of the Seedlips, though it doesn’t seem to have caught the general public’s taste as much; I bought it from the discontinued shelf at Tesco’s and the landlady of our local pub dislikes it. I was knocked out by my first taste; but I grew up in the country with a mother who was a gardener; and this mixture of veg patch ingredients is perhaps exerting a Proustian pull on my senses. But, trust me, it works. The smell is snapped pea pod, a clean green smell with herbal undernotes. There’s a complexity of flavouring without the need to rely on heavy spicing, (it’s always a relief not to encounter the ubiquitous juniper of most non-alcoholic spirits). This is something wholly original, compiled by a master hand at mixing and blending flavours. It’s complex, enticing and light. The fresh clean green taste of the pea sits beautifully on top of herbal notes and somewhere in there there’s a freshness of cut grass. Perfect for drinks on the lawn.
